Healthy Breakfast Pancake Muffins

Meet the new perfect edition to your morning routine. Everything amazing about a blueberry and banana pancake; cooked into deliciously moist and filling muffins (easy to take on the go)! Have one for breakfast, or pack as a ‘pick me up’ snack during your busy day. These muffins are so tasty, and by being GF, DF and RSF they are sure to please everyone. img_5181.jpg

What You’ll Need:

  • 1 large Banana
  • 2 eggs
  • 1 tsp Vanilla Extract
  • ¼ cup Chia Seeds
  • ½ cup Almond Meal
  • 1 tbl Vanilla Protein Powder
  • ¼ cup Almond Milk
  • ¾ cup frozen blueberries
  • ½ teaspoon Bicarb Soda
  • ½ teaspoon baking powder
  • *optional* Granola (top sprinkle on top)

Makes approx.  12 muffins FullSizeRender

Method:

  1. Preheat oven to 180 degrees Celsius
  2. Mash banana until smooth in bowl
  3. Add in remaining wet ingredients and mix until all combined
  4. Add in almond meal- mix while adding to avoid clumping
  5. Add in chia seeds, protein powder, bicarb and baking powder, combine all ingredients.
  6. Sprinkle in blueberries, avoid mixing too much to avoid colour mixing of the blueberries and mixture.
  7. Evenly distribute into muffin pan
  8. Sprinkle granola on top before cooking
  9. Bake for 15-20 minutes, watch to avoid top burning.
  10. Allow to completely cool and store in the fridge, in an airtight container.

My Routine: Morning Wake Up

Hello lovely people,

I am thinking of starting a new series on my blog called My Routine. I’ll do multiple posts on all different routines I do in my life. So, today I am going to start with my wake up routine. I am going to try to go in the order of routines from when I wake up to when I go into my slumber for this series. 🙂

Let’s begin:

1. When I first wake up; usually to an alarm. As I am on holidays at the moment I don’t have a specific time that I wake up but usually in my normal school routine, I’ll wake up at 5:30/6am. Anyways, I normally check my emails, twitter, Instagram and messages on my phone (on my night stand) right when I wake up.

2. Then I will build up the strength to get up and go into the bathroom to pull my hair up and do other things..

3. Then I will head outside for some breakfast. Generally, I eat healthily for breakfast. So I will have a smoothie or Weet Bix w/ Almond Milk and Chia Seeds or if I have extra time 2 eggs on corn thins. Accompanying this, I will have a cup of Jasmine Green Tea and sometimes a Berocca.

4. With my breakfast, I will then go watch some Youtube whilst I eat or chat to my family (whoever is up or around at the time).

5. I will then go get ready for the day 🙂

And, that concludes my Morning Wake Up Routine.

Wake Up In The Morning Feeling Like…..

Hello Everybody, 

Today I am going to teach you some simple ways to help you wake up easier and get ready in the mornings, with full energy!

Get At Least 7-9 Hours Of Sleep:

Getting enough sleep is super important if you are looking for a way to kick start you day. Make sure you get at least 7-9 hours of sleep a night; depending on your age and your sleeping habits. If you under or over sleep, it will leave you feeling tired and sluggish during the day. Getting enough sleep will allow you to wake up feeling refreshed and ready for the day. Also, make sure you get into a sleeping routine so your body clock gets used to your sleeping habits and allows you to wake up feeling rested and raring for the day.

Start Your Day With Some Exercise:

Yoga or some light exercise is a fantastic way to get your body ready for the day and kick start your metabolism. A brisk walk or run or even some yoga is a great way to begin your morning. The internet is filled with morning workout routines that will allow you to be prepared for the day and be full of energy. BONUS: Starting you day with exercise will also benefit your health and fitness.

Wash Up:

Simply having a shower or just washing your face in the morning can help you feel refreshed and prepared for the day. It will refresh your body and help you fully wake up from your restful slumber. If you do exercise in the morning, I suggest doing this afterwards.

Drink Tea Or Another Beverage:

Starting you day with a healthy Green Tea (I drink Jasmine Green Tea) or any other tea (even coffee, if you wish..) will help kick start your day. Tea will especially help nourish your body and get your metabolism going; helping your day start in an energetic and ‘ready’ way. Also, tea and coffee with caffeine will give you a little extra wake up call. 

Eat A Filling And Nutritious Breakfast:

Again with the metabolism… Eating a nutritious and filling breakfast with get your metabolism raring and kick start your body into action. Eating fruit, muesli, granola, yogurt or whipping up a quick and healthy smoothie, is a super healthy way to start you day and will help you feel ready and filled until Morning Tea or even Lunch. 

Quick Clean:

This isn’t everyones favourite, but I really think it helps, especially when you get home. Before you leave in the morning, make your bed and open up your curtains. It makes you feel a bit more prepared for the day as the sun is shining into your room and your room will appear to be cleaner, just because your bed it nicely made. Making your bed in the morning and opening your curtains and windows will also make the room nicer to return to in the afternoon, or whenever you get home.
